you need:50 gr margarine,125 gr of caster sugar,finely grated rind and juice of 2 lemons,2 eggsseparated,300 ml of milk and 50 gr of self raising flour

 

cream t he margarine and sugar together with the lemon rind until, pale and fluffy

Add the egg yolks and beat in well

stir in half the milk,then the flour

pour in the reste of the milk and the lemon juice

Whisk the egg whites until just holding their shape and fold into the mixture

Pour into a greased 11/4l ovenproof pie dish and place this in a roasting tin half filled with water

Cook in the oven mark 4,180°C for about 1 hour

The pudding will separate out into a creamy base and a sponge top,when cooked

Serve hot with custard or ice cream
